How to grow Hatch chile

Never grown chile before? Follow these six steps.

  1. 1

    Start seeds indoors

    • 8–10 weeks before your last frost
    • Sow ¼" deep in seed-starting mix
    • Keep soil 80–85°F (a heat mat helps)
    • Sprouts in 7–14 days
  2. 2

    Give them light

    • 14–16 hours a day
    • A grow light 2–3" above the seedlings
    • Or your sunniest south window
    • Leggy, stretched seedlings need more light
  3. 3

    Toughen them up

    • Wait for 4–6 true leaves
    • Set outside 1–2 hours a day
    • Add more time each day for 7–10 days
    • Bring them in on cold nights
  4. 4

    Plant outside

    • When nights stay above 55°F
    • Full sun, 6–8 hours a day
    • 18–24" apart in the garden
    • Or one plant per 5-gallon pot
  5. 5

    Water & feed

    • Water deeply about once a week
    • Let the top inch of soil dry between
    • Mix in compost when planting
    • Go easy on nitrogen once flowers appear
  6. 6

    Harvest

    • Green: about 70–85 days after planting out
    • Red: leave on 2–3 weeks longer
    • Cut pods off; don't pull them
    • Slightly drier soil = hotter chile

Common problems

Seeds won't sprout

Soil is usually too cool. Chile seeds need 80–85°F, so use a heat mat and give them up to 3 weeks.

Seedlings are tall and floppy

They need more light. Move the grow light closer or add hours.

Flowers fall off in summer

Normal in heat over 90°F. Keep watering evenly and new flowers will set when it cools.

Leaves turn yellow

Often too much water. Let the top inch of soil dry before watering again.
